Flavorful Mediterranean Chicken Wraps

These Mediterranean Chicken Wraps are a quick and flavorful meal featuring seasoned chicken, fresh veggies, and creamy tzatziki, all wrapped in a soft tortilla.

Ingredients
  

Group: For the Chicken
  • 1 lb. boneless, skinless chicken breasts
  • 2 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 tsp. dried oregano
  • to taste Salt and pepper
Group: For the Wraps
  • 4 large whole wheat or spinach wraps
  • 1 cup mixed greens such as arugula or spinach
  • 1 whole cucumber, thinly sliced
  • 1 whole red bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ whole red onion, thinly sliced
  • 1 cup tzatziki sauce store-bought or homemade

Method
 

  1. Pat the chicken breasts dry with paper towels. In a small bowl, whisk together olive oil, garlic powder, paprika, dried oregano, salt, and pepper until well combined.
  2. Heat a large skillet over medium-high heat and add the seasoned chicken breasts. Cook for about 5-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F. Let the chicken rest for a few minutes before slicing into thin strips.
  3. Lay each wrap flat on a clean surface. Start with a handful of mixed greens, followed by slices of chicken, cucumber, red bell pepper, cherry tomatoes, and red onion. Drizzle tzatziki sauce generously over the top.
  4. Fold in the sides of the wrap to tuck in the filling, then roll it tightly from the bottom up. Repeat with remaining wraps.
  5. Cut each wrap in half on a diagonal and serve with extra tzatziki on the side.

Notes

Allow chicken to rest after cooking to retain its juices. Customize fillings and serve with a light salad or baked fries.
