  • 4 fillets salmon (preferably wild-caught)
  • 2 Tbsp. olive oil
  • 1 whole lemon (zest and juice)
  • 2 Tbsp. fresh dill, chopped (or 1 Tbsp. dried dill)
  • 2 cloves garlic, minced
  • salt and freshly ground black pepper, to taste
  • lemon wedges, for serving

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, lemon zest, lemon juice, garlic, and fresh dill.
  3. Place salmon fillets on a parchment-lined baking sheet and drizzle marinade over them, coating each fillet well. Season with salt and pepper.
  4. Bake for 12-15 minutes until the salmon is opaque and flakes easily with a fork.
  5. Remove from oven, squeeze extra lemon juice over the top, and serve with lemon wedges.

Notes

Be cautious of overcooking the salmon to maintain its tender flakiness.
