- In a mixing bowl, whisk together the fresh key lime juice, lime zest, honey, soy sauce, olive oil, minced garlic, cumin, and black pepper until combined.
- Place the chicken thighs in a large resealable plastic bag or bowl and pour the marinade over them. Seal the bag or cover the bowl and refrigerate for at least 1 hour, or overnight for deeper flavor.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade, letting the excess drip off. Grill for about 6–7 minutes on each side or until the internal temperature reaches 165°F.
- Allow the chicken to rest for 5 minutes before serving. Garnish with fresh cilantro and key lime wedges.
Notes
For the best flavor, marinate the chicken overnight. Adjust cooking time based on the size of chicken thighs.
