- Begin by rinsing the cilantro under cold water to eliminate any grit. Pat it dry thoroughly with a kitchen towel.
- In a blender or food processor, combine the cilantro, jalapeƱos, garlic, salt, and lime juice. Blend until finely chopped.
- Add the mayonnaise and olive oil. Process until smooth, adding water as needed to achieve desired thickness.
- Sample the sauce and adjust seasoning with more salt or lime juice as necessary.
- Transfer Aji Verde into a serving bowl or store in an airtight container in the refrigerator.
