  • 1 ripe banana mashed the riper, the better!
  • 3 Tbsp. all-purpose flour
  • 2 Tbsp. granulated sugar
  • 1/8 tsp. baking powder
  • 1/8 tsp. baking soda
  • a pinch of salt
Group: Wet Ingredients
  • 2 Tbsp. milk preferably whole milk for richness
  • 1 Tbsp. vegetable oil or melted coconut oil for a hint of tropical flavor
  • 1/4 tsp. vanilla extract
  • optional toppings: cinnamon or walnuts for extra flavor

Method
 

  1. In a microwave-safe mug, mash a ripe banana with a fork until it’s completely smooth.
  2. Add flour, sugar, baking powder, baking soda, and salt to the mug. Mix until just combined.
  3. Pour in milk, vegetable oil, and vanilla extract. Whisk with a small fork until glossy and smooth.
  4. Microwave on high for about 1 minute and 30 seconds, keeping an eye to prevent overflow.
  5. Wait a minute for the mug to cool before enjoying. Optionally top with whipped cream or nut butter.

Notes

This mug cake is best made fresh, but ingredients can be pre-measured for quick assembly.
