Method
 

  1. In a medium bowl, combine the red wine vinegar, dried oregano, garlic powder, and Dijon mustard. Whisk until smooth.
  2. Slowly drizzle in the olive oil while whisking vigorously to create a smooth emulsion.
  3. Add salt and pepper to taste, adjusting as necessary.
  4. Taste your dressing and adjust the seasoning as needed before storing in a jar.
  5. Transfer the dressing to a jar with a tight lid and refrigerate for up to a week.
