  • 4 large ripe tomatoes (preferably heirloom)
  • 1 lb. fresh mozzarella cheese (soft variety packed in water)
  • a handful fresh basil leaves
  • extra-virgin olive oil (high-quality)
  • balsamic vinegar (optional)
  • sea salt and freshly cracked black pepper (to taste)

Method
 

  1. Begin by slicing the ripe heirloom tomatoes into thick rounds, about half an inch.
  2. Next, cut the fresh mozzarella into similar-sized rounds.
  3. On a large serving platter, alternate layers of the tomato and mozzarella slices, overlapping them slightly.
  4. Tuck fresh basil leaves between the layers for color and aroma.
  5. Drizzle with extra-virgin olive oil and, optionally, balsamic vinegar. Sprinkle with sea salt and pepper.

Notes

Serve immediately after preparation for the freshest taste.
