Method
- Begin by slicing the ripe heirloom tomatoes into thick rounds, about half an inch.
- Next, cut the fresh mozzarella into similar-sized rounds.
- On a large serving platter, alternate layers of the tomato and mozzarella slices, overlapping them slightly.
- Tuck fresh basil leaves between the layers for color and aroma.
- Drizzle with extra-virgin olive oil and, optionally, balsamic vinegar. Sprinkle with sea salt and pepper.
