Ingredients

  • 2 cups fresh basil leaves, packed
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup pine nuts
  • 1 clove garlic, crushed
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste

  • Dry skillet
  • Airtight container

Method
 

  1. Rinse the basil leaves under cold water and pat them dry.
  2. Toast the pine nuts in a dry skillet over medium heat until golden brown, about 3-5 minutes.
  3. In a food processor, combine basil, toasted pine nuts, garlic, and Parmesan. Pulse until coarsely chopped.
  4. With the processor running, drizzle in the olive oil, stopping to scrape down the sides as necessary. Blend until smooth and creamy.
  5. Taste and adjust seasoning with salt and black pepper as desired.
  6. Serve immediately or store in an airtight container, covered with a layer of olive oil.

For freshness, use vibrant basil and avoid overprocessing for texture.
