Ingredients

  • 1 pound ground chicken
  • ½ cup breadcrumbs (preferably panko)
  • 2 green onions, finely chopped
  • 1 Tbsp. fresh ginger, minced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 Tbsp. sesame oil

Equipment

  • Grill or Skillet
  • Small saucepan
  • Mixing bowl
  • Parchment paper

Method
 

  1. In a large bowl, combine ground chicken, breadcrumbs, green onions, ginger, garlic, sesame oil, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into patties, about ¾ inch thick, and place them on a parchment-lined tray.
  3. In a small saucepan, whisk together soy sauce, mirin, brown sugar, and rice vinegar. Simmer for 5 minutes, then gradually add cornstarch mixture and cook until thickened.
  4. Cook the chicken patties on medium heat for 5-6 minutes per side, brushing with teriyaki sauce during the last minute.
  5. Assemble your burger with toasted buns, lettuce, chicken patty, cucumbers, teriyaki sauce, and sprinkle with sesame seeds.

Notes

For best flavor, consider marinating the ground chicken with the teriyaki sauce for an hour before forming patties.
