Sautéed Garlic Asparagus with Bacon

A quick and flavorful holiday side dish made with fresh asparagus sautéed in bacon fat and garlic.

  • 1 pound fresh asparagus, trimmed
  • 4 strips bacon, chopped
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste

Method
 

  1. Start by placing your stovetop in medium heat. In a large skillet, add the chopped bacon. Sizzle the bacon strips until they're crispy and golden, approximately 5-7 minutes.
  2. Remove the bacon from the skillet, leaving about 1 tablespoon of the rendered fat behind. Increase the heat to medium-high and add the fresh asparagus to the skillet. Sauté for about 5 minutes, turning the asparagus until they’re bright green and tender-crisp.
  3. Lower the heat to medium and toss in the minced garlic. Stir continuously for about 1-2 minutes, until the garlic is fragrant and just beginning to brown. Monitor closely to prevent the garlic from burning.
  4. Return the crispy bacon to the skillet and toss everything together. Season with salt and black pepper to taste.
  5. Transfer the sautéed asparagus and bacon to a serving dish and finish with a squeeze of fresh lemon juice for a zesty kick.

Notes

This dish is best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for 2-3 days, and reheat gently in a skillet.
