Method
 

  1. Start by selecting a beautifully ripe watermelon—look for one that feels heavy for its size and has a uniform shape. Cut the watermelon in half lengthwise, then slice each half into thick wedges. Carefully remove the rind and cut each wedge into "fries"—about 1-inch wide. Sprinkle a pinch of flaky sea salt over the watermelon fries; this enhances their sweetness and adds a delightful contrast.
  2. In a mixing bowl, combine the coconut yogurt, lime zest, lime juice, and honey. Whisk until the mixture is smooth and glossy. Adjust the sweetness by adding more honey if desired.
  3. Arrange the watermelon fries on a large platter, garnishing with fresh mint leaves for added elegance. Serve the coconut lime dip in a small bowl on the side, garnished with a sprinkling of shredded coconut.
