Method
 

  1. Begin by heating a nonstick skillet over medium heat. Add a touch of cooking spray or a splash of olive oil to the pan. Once warm, lay down the turkey bacon and cook for about 6-8 minutes, flipping occasionally until crisp and flavorful.
  2. In a mixing bowl, whisk the egg whites with a pinch of salt and pepper until frothy. This step is crucial for achieving that light texture when cooked.
  3. After removing the turkey bacon, pour in the seasoned egg whites into the same skillet. Let them cook undisturbed for about a minute before pushing the edges toward the center with a spatula. Cook until they are just set with a slight jiggle in the middle.
  4. Lightly toast the bread slices in the skillet until golden brown. Start stacking your sandwich with a slice of toast, followed by the egg whites, crispy turkey bacon, and a slice of cheddar cheese. For an added touch, include fresh spinach or arugula.
