Quick and Flavorful Shrimp Scampi

Ingredients
  

Group: Shrimp and Pasta
  • 1 lb. large shrimp, peeled and deveined
  • 8 oz. linguine or spaghetti
Group: Flavor Base
  • 8 Tbsp. unsalted butter
  • 3 Tbsp. extra-virgin olive oil
  • 4-5 cloves garlic, minced
  • 1/2 tsp. red pepper flakes
  • Salt and pepper, to taste
Group: Sauce
  • 1/2 cup dry white wine
  • 1 Juice of lemon
  • 1/4 cup fresh parsley, chopped

  • Large pot

Method
 

  1. Start by boiling a large pot of salted water. Once it’s rolling, add your linguine or spaghetti and cook according to package instructions until al dente. Reserve about a cup of the pasta water and then drain the pasta.
  2. While the pasta cooks, heat the olive oil and 4 tablespoons of butter in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes to the skillet. Sauté for about a minute until the garlic is fragrant but not browned.
  4. Toss in the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.
  5. Pour in the white wine and lemon juice, and let the mixture simmer for about 2 minutes.
  6. Add the drained pasta to the skillet, tossing everything together gently. If the sauce seems too thick, feel free to add some reserved pasta water.
  7. Stir in the remaining 4 tablespoons of butter until melted, then add the fresh parsley.
  8. Plate your Shrimp Scampi immediately, garnishing with additional parsley and grated Parmesan if you like.
