  • 2 Tbsp. olive oil
  • 2 Tbsp. lemon juice, freshly squeezed
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for garnish

Method
 

  1. Start by patting dry your scallops with paper towels—moisture is the enemy of a perfect sear.
  2. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.
  3. Coat the scallops in the marinade and let them sit for about 15-30 minutes.
  4. Preheat your grill to medium-high heat and grill the scallops for about 2-3 minutes per side.
  5. Remove scallops from the grill and garnish with fresh parsley before serving.

Notes

These grilled scallops are best enjoyed fresh but can be stored for up to 2 days in the refrigerator.
