  • 2 large yellow onions
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 1 large egg
  • 1 cup buttermilk
  • 2 cups breadcrumbs (Panko preferred)
  • Vegetable oil (for frying)

Method
 

  1. Start by slicing your yellow onions into thick rings, about ½ inch wide.
  2. In a large mixing bowl, whisk together the flour, baking powder, garlic powder, paprika, salt, and black pepper. In a separate bowl, combine the egg and buttermilk until well blended.
  3. Dip the onion rings first into the flour mixture, then into the egg mixture, and back into the flour mixture for a second coating.
  4. In a deep pot, pour vegetable oil until it's about 2 inches deep and heat over medium-high until it shimmers, around 350°F (180°C).
  5. Carefully place a few onion rings into the hot oil and fry for about 2-3 minutes on each side until golden brown.
  6. Transfer the fried onion rings to a plate lined with paper towels to drain excess oil. Serve with your favorite dipping sauce.

Notes

For the ultimate crunch, do not skip the second coating of flour and avoid overcrowding the frying pot.
