Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with non-stick spray.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth; the riper they are, the better the flavor.
  3. Add the creamy peanut butter, granulated sugar, and brown sugar to the mashed bananas. Using an electric mixer or whisk, beat until creamy and well combined.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, stirring gently until just combined, being careful not to overmix.
  6. Pour the batter into the prepared loaf pan and give it a gentle shake to level the batter.
  7. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden and slightly domed.
  8. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve, or wrap for later!
