  • 1 lb. ground beef, preferably grass-fed
  • 1 medium sweet potato, peeled and diced into ½-inch cubes
  • 2 medium zucchinis, diced
  • 1 small onion, diced
  • 1 whole bell pepper, diced any color
  • 3 cloves garlic, minced
  • 1 tsp. smoked paprika
  • ½ tsp. cumin
  • salt and freshly ground black pepper to taste
  • 2 Tbsp. olive oil
  • fresh parsley or cilantro, for garnish optional
  • crumbled feta, for garnish optional

  • 10-inch cast-iron skillet

Method
 

  1. In a large cast-iron skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef, breaking it apart, seasoning with salt and pepper, and cook for about 5-7 minutes until browned and fully cooked.
  2. Push beef to one side of the skillet. Add 1 tablespoon of olive oil, onions, and peppers. Sauté for about 3-4 minutes until softened.
  3. Add diced sweet potatoes, stir, and cover to steam for approximately 10 minutes until fork-tender.
  4. Stir in zucchini, garlic, smoked paprika, and cumin. Cook uncovered for about 5 minutes until zucchini is tender-crisp.
  5. Serve hot, garnished with feta and parsley or cilantro.
