- In a large cast-iron skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef, breaking it apart, seasoning with salt and pepper, and cook for about 5-7 minutes until browned and fully cooked.
- Push beef to one side of the skillet. Add 1 tablespoon of olive oil, onions, and peppers. Sauté for about 3-4 minutes until softened.
- Add diced sweet potatoes, stir, and cover to steam for approximately 10 minutes until fork-tender.
- Stir in zucchini, garlic, smoked paprika, and cumin. Cook uncovered for about 5 minutes until zucchini is tender-crisp.
- Serve hot, garnished with feta and parsley or cilantro.
