Healthy Zucchini Pizza Bites for Holiday Gatherings

For a delicious, healthy appetizer, slice zucchinis and bake them with marinara and cheese for a satisfying alternative to traditional pizza.

Ingredients
  

Group: Zucchini Base
  • 2 medium zucchinis, sliced into thick rounds (about 1 lb)
Group: Cheeses
  • 1 cup shredded mozzarella cheese
  • cup grated Parmesan cheese
Group: Sauce and Seasoning
  • ½ cup marinara sauce (no-sugar-added recommended)
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder (fresh minced garlic works wonders too!)
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh basil leaves (optional, for garnish)

  • Baking sheet Parchment-lined
  • Sharp knife
  • Measuring cups and spoons

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Slice your zucchinis into thick rounds, about ½ inch thick.
  3. Place the rounds on a parchment-lined baking sheet. Drizzle lightly with olive oil and sprinkle generously with salt and pepper. Bake for about 10 minutes.
  4. Remove the zucchini from the oven. Spoon a dollop of marinara sauce on each round and sprinkle them with mozzarella and Parmesan cheese.
  5. Sprinkle Italian seasoning and garlic powder over the top.
  6. Return to the oven and bake for another 8-10 minutes, or until the cheese is melted and bubbly.
  7. Allow the zucchini pizzas to cool for a couple of minutes, then top with fresh basil leaves before serving.

Notes

Tips: Avoid slicing zucchini too thin to prevent sogginess. Pre-baking is essential to remove moisture, and don’t overload with toppings.
