  • 1 lb. ground beef (lean cut recommended)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach (or frozen if needed)
  • 1 tsp. smoked paprika
  • 1 tsp. dried oregano
  • 4 oz. Greek feta cheese, crumbled
  • 2 Tbsp. olive oil
  • Optional: fresh lemon juice for brightness

Method
 

  1. In a large cast-iron skillet, heat the olive oil over medium heat. When the oil shimmers, add the finely chopped onion. Sauté for about 5 minutes, stirring frequently, until the onion becomes translucent. Stir in the minced garlic and cook for an additional minute.
  2. Add the ground beef to the skillet, breaking it apart with a wooden spoon. Season with salt, pepper, smoked paprika, and dried oregano. Cook until the beef is browned and cooked through, about 6-8 minutes.
  3. Once the beef is fully cooked, fold in the fresh spinach. Cook until just wilted, around 2-3 minutes.
  4. Remove the skillet from heat. Gently fold in the crumbled feta cheese, letting it melt slightly. Drizzle with fresh lemon juice before serving.

Notes

Letting the skillet rest for a few minutes before serving enhances the flavors.
