- Crisp the bacon in a skillet over medium heat until golden brown, then chop into bits and mix with kimchi and brown sugar. Cook until thickened, about 10 minutes. Set aside to cool.
- In a large bowl, combine ground chicken, gochujang, soy sauce, sesame oil, garlic powder, and black pepper. Mix gently and form into patties approximately ¾ inch thick.
- Preheat grill or skillet over medium-high heat. Cook patties for about 5-6 minutes on each side until internal temperature reaches 165°F.
- Toast brioche buns and assemble burgers with lettuce, chicken patty, kimchi bacon jam, sliced tomatoes, and scallions.
