  • 1 lb. large shrimp, peeled and deveined
  • 2 Tbsp. fresh rosemary, finely chopped
  • 4 cloves garlic, minced
  • 1 Tbsp. lemon juice, freshly squeezed
  • ΒΌ cup extra virgin olive oil
  • Salt and black pepper, to taste
  • Skewers (wooden or metal)

  • Mixing bowl
  • Skewers Soak wooden skewers in water for 30 minutes to prevent burning.

Method
 

  1. In a large mixing bowl, combine olive oil, minced garlic, chopped rosemary, and lemon juice. Whisk until well blended.
  2. Add shrimp to the bowl, tossing to coat thoroughly. Cover with plastic wrap and let marinate in the refrigerator for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Thread marinated shrimp onto skewers snugly, ensuring they are not overcrowded.
  5. Place skewers on the grill and cook for about 2-3 minutes per side until shrimp turn pink and opaque.
  6. Remove from grill and season with additional salt and pepper if desired. Serve immediately, garnished with fresh rosemary or lemon.

Notes

Ensure to not overcook the shrimp to avoid rubbery texture; they should be just opaque when done.
