  • 4 pieces boneless, skinless chicken breasts preferably organic
  • 1 orange, juiced and zested
  • 1 lemon, juiced and zested
  • 1 lime, juiced and zested
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 2 Tbsp. honey
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 Tbsp. fresh rosemary, chopped or 1 teaspoon dried

Method
 

  1. In a medium bowl, mix together the orange, lemon, and lime juices along with the zest of each fruit. Whisk in the olive oil, minced garlic, honey, salt, and pepper.
  2. Place the chicken breasts into a large resealable plastic bag or bowl. Pour the marinade over them, seal the bag or cover the bowl, and allow to marinate for at least 30 minutes, or longer for deeper flavor.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off.
  4. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Let it rest for 5 minutes before serving.
  5. Slice the chicken and arrange it on a platter, garnished with fresh rosemary sprigs and lemon slices for presentation.
