  • 8 oz. sliced turkey breast
  • 4 slices provolone cheese
  • 2 cups fresh baby spinach
  • 1/4 cup sun-dried tomatoes packed in oil, chopped
  • 1/4 cup basil pesto
  • 1 Tbsp. olive oil, for drizzling
  • to taste salt and pepper

Method
 

  1. Slice a generous piece of the focaccia horizontally.
  2. Spread a thick layer of basil pesto on the bottom half of the focaccia.
  3. Layer sliced turkey evenly over the pesto.
  4. Add provolone cheese followed by fresh spinach.
  5. Sprinkle chopped sun-dried tomatoes on top.
  6. Season with salt and pepper, and drizzle with olive oil.
  7. Close the sandwich and press down gently. Heat a non-stick pan over medium heat and grill the sandwich on both sides until golden brown and cheese is melted.
  8. Remove from the pan, slice in half, and serve immediately.
