Ingredients

  • 3 cups all-purpose flour
  • 1 ½ teaspoons salt
  • ½ teaspoon active dry yeast

  • 1 cup shredded cheese (sharp cheddar and Gruyère preferred)
  • ½ cup chopped fresh herbs (like rosemary and thyme)
  • Additional flour for dusting

Method
 

  1. In a large mixing bowl, whisk together the all-purpose flour, salt, and active dry yeast until evenly combined.
  2. Pour in the warm water and stir with a wooden spoon until it forms a shaggy, wet dough.
  3. Gently fold in the shredded cheese and chopped herbs into the dough.
  4. Cover the bowl with a clean kitchen towel and let it rise at room temperature for about 12 to 18 hours.
  5. About 30 minutes before you plan to bake, preheat your oven to 450°F (232°C) and place a Dutch oven inside to heat up.
  6. Dust a clean surface with flour and gently turn out the risen dough onto it. Shape the dough into a round loaf without kneading.
  7. Let your formed loaf rest for about 30 minutes while the oven continues to heat up.
  8. Carefully remove the hot Dutch oven from the oven and place your bread inside. Cover with the lid and bake for 30 minutes.
  9. Uncover and bake for an additional 15 to 20 minutes until the crust is a gorgeous golden brown.
  10. Remove the bread and let it cool on a rack. Wait about 30 minutes before slicing.
