  • 4 cups seeded watermelon, cut into bite-sized cubes
  • 1 cup crumbled feta cheese
  • 1/2 cup fresh mint leaves, roughly chopped
  • 1/2 cup finely diced red onion
  • 1/4 cup extra-virgin olive oil
  • 2 Tbsp. lime juice (freshly squeezed is best)
  • a pinch of salt and freshly cracked black pepper, to taste

Method
 

  1. Start by cutting your watermelon into approximately 1-inch cubes. Make sure it’s seedless.
  2. In a large mixing bowl, combine the watermelon cubes, crumbled feta, chopped mint, and diced red onion.
  3. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper. Pour this dressing over the salad mixture, then gently toss to combine.
  4. Let the salad sit for about 10 minutes before serving. Serve cold.

Notes

It's best enjoyed fresh, can last up to 2 days in the refrigerator. To customize, consider adding spicy jalapeños or crunchy nuts.
