  • 2 ripe mangoes, peeled and diced, plus additional slices for garnish
  • 8 ounces softened, full-fat cream cheese
  • 1 cup powdered sugar
  • 1 tsp. vanilla extract
  • 2 cups whipped cream, store-bought or homemade
  • 1 cup crushed graham crackers
  • 1 Tbsp. lime juice

Method
 

  1. Start by making a luscious mango puree. Blend the diced mango in a food processor until smooth, then set aside.
  2. In a large mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Whisk until glossy and smooth—about 2 minutes.
  3. Gently fold in the whipped cream using a rubber spatula to maintain the volume for a light, airy mixture.
  4. In a large glass bowl (or individual cups), start layering with crushed graham crackers, then the cheesecake mixture, followed by a layer of mango puree. Repeat until the top, finishing with whipped cream and mango slices.
  5. Cover with plastic wrap and refrigerate for at least 4 hours to allow flavors to meld.

Notes

This trifle is perfect for prepping the day before; just add fresh whipped cream and fruit before serving.
