  • 4 slices provolone cheese which melts beautifully
  • 4 Tbsp. pesto store-bought or homemade, fresh basil if available
  • 2 rolls ciabatta rolls fresh and crusty, or any bread of your choice
  • Salt to taste
  • freshly cracked black pepper to taste
  • olive oil for toasting (garlic-infused is a favorite)
  • optional add-ons sliced tomatoes, arugula, or red pepper flakes

Method
 

  1. Begin by slicing your ciabatta rolls in half. A gentle press with a butter knife helps in spreading your toppings evenly on sturdier bread.
  2. Generously spread a tablespoon of pesto on the inside of each half, inviting a vibrant aroma that's truly enticing!
  3. On the bottom half, layer the sliced turkey evenly, covering the surface fully. Then, add slices of provolone cheese. Don’t hesitate to put extra cheese; it only adds to the delight!
  4. Sprinkle a pinch of salt and black pepper over the cheese. If using, add your tomatoes or arugula now for a freshness boost.
  5. Place the top half of the sandwich over the layers and brush the outside with olive oil. Heat a skillet over medium heat and place your sandwich inside. Toast for about 3-4 minutes on each side until the bread is golden and crispy, and the cheese is melty. Carefully flip it with a spatula to avoid spills.
