- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together melted coconut oil and brown sugar until combined. Add mashed bananas, beaten egg, and vanilla extract; stir until glossy.
- In another bowl, mix whole wheat flour, baking soda, salt, and ground cinnamon.
- Gradually fold the dry ingredients into the wet mix, making sure not to overmix—aim for a lumpy batter.
- If using, gently fold in the walnuts or chocolate chips.
- Pour batter into a greased 9x5-inch loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Use very ripe bananas for maximum flavor. Don't overmix the batter, and let it cool before slicing for best results.
