  • 1 pound beef ribeye steak, thinly sliced
  • 2 Tbsp. vegetable oil, divided
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 4 slices provolone cheese (or American cheese)
  • 2 hoagie rolls or Italian bread
  • Salt and pepper, to taste
  • Optional toppings: jalapeños, mushrooms, or additional cheese

Method
 

  1. Place the thinly sliced ribeye in the freezer for about 30 minutes for easier handling. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced onions and green bell peppers to the skillet. Sauté for about 5-7 minutes until tender and caramelized. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Increase heat to high and add the ribeye steak. Sear for about 3-4 minutes, stirring often, and season with salt and pepper.
  4. Return the sautéed peppers and onions to the skillet, mixing everything together.
  5. Reduce heat to low and lay the slices of provolone cheese on top of the beef mixture. Cover the skillet for 1-2 minutes until the cheese is melted.
  6. Slice the hoagie rolls in half and lightly toast them if desired. Pile the beef and melted cheese mixture onto each hoagie.
  7. Serve and enjoy the blend of savory beef, sweet veggies, and melted cheese.

Notes

It's essential to slice the ribeye thinly for the best texture. Consider experimenting with different cheeses and possible toppings.
