- Place the thinly sliced ribeye in the freezer for about 30 minutes for easier handling. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add the sliced onions and green bell peppers to the skillet. Sauté for about 5-7 minutes until tender and caramelized. Remove and set aside.
- In the same skillet, add the remaining tablespoon of oil. Increase heat to high and add the ribeye steak. Sear for about 3-4 minutes, stirring often, and season with salt and pepper.
- Return the sautéed peppers and onions to the skillet, mixing everything together.
- Reduce heat to low and lay the slices of provolone cheese on top of the beef mixture. Cover the skillet for 1-2 minutes until the cheese is melted.
- Slice the hoagie rolls in half and lightly toast them if desired. Pile the beef and melted cheese mixture onto each hoagie.
- Serve and enjoy the blend of savory beef, sweet veggies, and melted cheese.
