  • 2 cups fresh or frozen mixed berries (blueberries, raspberries, strawberries)
  • 1/4 cup granulated sugar
  • 2 Tbsp. cornstarch
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla extract

  • 1 cup old-fashioned rolled oats
  • 1/3 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt

Method
 

  1. Start by preheating your oven to 350°F.
  2. In a large bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  3. Pour this mixture into an 8x8-inch baking dish.
  4. In another bowl, mix the rolled oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly.
  5. Sprinkle the oat mixture evenly over the berries. Bake for 35-40 minutes, or until golden brown.
  6. Allow it to cool for at least 10 minutes before serving warm with ice cream.

Notes

Allowing the crisp to cool slightly helps the juices set, making it easier to serve.
