- In a large mixing bowl, combine the ground chicken, breadcrumbs, feta cheese, parsley, red onion, garlic, oregano, salt, and black pepper. Mix well using your hands.
- Crack the egg into the mixture, ensuring everything is well incorporated. It should start to form a sticky, cohesive mass.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes. This step allows the flavors to marry and the mixture to firm up.
- Heat olive oil in a large skillet over medium heat. Wait until it shimmers before adding the patties.
- Scoop about 2 tablespoons of the mixture and form it into a patty, about 3 inches in diameter. Place the patties in the skillet, making sure not to overcrowd the pan.
- Cook for about 4-5 minutes on each side, or until they’re golden brown and cooked through. Remove the patties and place them on a paper towel-lined plate.
