This delightful Mango Sticky Rice combines glutinous rice, rich coconut milk, and ripe mangoes into a delicious dessert perfect for festive occasions.

Ingredients
  

Group: Sticky Rice
  • 1 cup glutinous rice (sweet rice)
Group: Coconut Sauce
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
Group: Fresh Fruit
  • 2 ripe mangoes
  • Sesame seeds or mung beans (optional, for garnish)

Equipment

  • Cheesecloth

Method
 

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak it in water for at least 4 hours or overnight.
  2. After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam for about 30 minutes until tender.
  3. While the rice steams, combine coconut milk, sugar, and salt in a saucepan. Cook over medium heat until sugar dissolves, avoiding boiling.
  4. Transfer the steamed rice to a bowl, pour two-thirds of the warm coconut sauce over it, and gently fold. Let it sit for 30 minutes.
  5. Peel and slice the mangoes into thin strips for presentation.
  6. Serve a scoop of sticky rice with mango slices, drizzle with remaining coconut sauce, and garnish with sesame seeds or mung beans.

Notes

Using high-quality coconut milk and ripe mangoes can greatly enhance this dish's flavor.
