Ingredients

  • 12 ounces uncooked spaghetti
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1 cup bell pepper, diced (red or yellow)
  • 1/2 cup red onion, finely chopped
  • 1 cup black olives, sliced
  • 1 cup mozzarella balls or cubed mozzarella cheese
  • 1/2 cup fresh basil leaves, torn
Group: Ingredients for the Dressing
  • 1 cup Italian dressing (homemade or store-bought)
  • Salt and pepper to taste

Equipment

  • Large pot
  • Large mixing bowl
  • Plastic wrap
  • Knife

Method
 

  1. Fill a large pot with water, add a good amount of salt, and bring it to a rolling boil. Add the spaghetti and cook according to package instructions until al dente. Once done, drain and rinse under cold water to cool.
  2. While the spaghetti cools, chop the cherry tomatoes, cucumber, bell pepper, and red onion.
  3. In a large mixing bowl, combine the cooled spaghetti, cherry tomatoes, cucumber, bell pepper, red onion, black olives, mozzarella, and fresh basil.
  4. Pour the Italian dressing over the salad and gently toss until well coated.
  5. Season with salt and pepper to taste.
  6. Cover the bowl with plastic wrap and refrigerate for at least an hour before serving.

Notes

This salad is perfect for potlucks and can be customized with your favorite ingredients. Make sure to let it chill to enhance the flavors.
