Ingredients

Group: Ingredients
  • 1 lb. boneless, skinless chicken thighs
  • 3 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 1 Juice of lemon
  • 2 tsp. dried oregano
  • 1 tsp. ground cumin
  • ½ tsp. smoked paprika
  • Salt and pepper to taste
  • 1 cup Greek yogurt (preferably full-fat)
  • ½ cucumber grated and excess moisture squeezed out
  • 2 cloves garlic, minced
  • 1 Tbsp. fresh dill, chopped (or 1 teaspoon dried dill)
  • ½ Juice of lemon
  • Salt to taste
  • Pita bread
  • Sliced tomatoes
  • Shredded lettuce
  • Red onions, thinly sliced

Equipment

  • Grill pan or cast-iron skillet

Method

  1. In a large bowl, combine the olive oil, minced garlic, lemon juice, oregano, cumin, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or ideally, overnight for enhanced flavor.
  2. In a medium bowl, mix the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, and salt. Cover and refrigerate until you're ready to serve.
  3. Heat a grill pan or cast-iron skillet over medium-high heat. Once hot, place the marinated chicken thighs in the pan. Cook for about 5-7 minutes per side, or until the chicken is caramelized and has reached an internal temperature of 165°F. Remove from heat and allow the chicken to rest for a few minutes.
  4. Slice the chicken into strips. Take a warm pita and layer it with the sliced chicken, fresh tomatoes, lettuce, red onions, and a generous dollop of tzatziki sauce.

Notes

Allow the chicken to marinate overnight for enhanced flavors.
