  • 8 pieces chicken (thighs or breasts, bone-in and skin-on)
  • 1 cup favorite BBQ sauce
  • 2 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (like cilantro or parsley)

Method
 

  1. Pat chicken pieces dry with paper towels. In a bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and pepper. Coat the chicken with the mixture.
  2. Preheat the grill to medium-high heat (about 400°F) if using gas; if using charcoal, prepare the coals until glowing.
  3. Place the chicken skin-side down on the grill. Sear for 5-7 minutes until golden, then flip and brush BBQ sauce onto the grilled side.
  4. Baste the chicken with BBQ sauce, reduce heat to medium, cover the grill, and cook for 15-20 minutes checking the internal temperature for 165°F.
  5. Let the chicken rest for 10 minutes before serving. Garnish with herbs and drizzle more BBQ sauce if desired.

Ensure to check for an internal temperature of 165°F for safe consumption. Letting the chicken rest before serving enhances juiciness.
