Ingredients

  • 1 pound thick-cut bacon
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper optional for a bit of heat
Group: For the Sliders
  • 12 pieces soft slider buns such as brioche or potato rolls
  • 1 cup mayonnaise
  • 2 large tomatoes, sliced
  • 2 cups fresh arugula or mixed greens
  • Salt and freshly ground black pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and place a rack on top. In a mixing bowl, combine the brown sugar, black pepper, and cayenne (if using).
  2. Dredge each slice of bacon in the sugar mixture until well coated, then lay them on the rack. Bake in the preheated oven for about 20-25 minutes or until the bacon is crispy and the sugar has formed a glossy glaze.
  3. Once the bacon has cooled slightly, split the slider buns in half and lightly toast them if desired. Spread a generous dollop of mayonnaise on the bottom half of each bun, followed by the candied bacon, a slice of tomato, and a handful of fresh arugula. Season with a dash of salt and black pepper.
  4. Place the top half of the bun on each slider and secure with a toothpick if needed. Arrange these sliders on a platter.

Notes

For extra flavor, consider adding avocado slices or jalapeños. Make the candied bacon ahead of time and store it in an airtight container.
