  • 2 cans young green jackfruit in brine Do not use ripe fruit
  • 1 Tbsp. olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp. smoked paprika
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • Salt and pepper to taste
  • 1 cup BBQ sauce Choose your favorite brand or homemade
  • Optional toppings: coleslaw, pickles, sliced avocado

Method
 

  1. Drain and rinse the jackfruit thoroughly. Using your hands, shred the jackfruit pieces to resemble pulled pork.
  2. In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3–5 minutes. Toss in the minced garlic and stir for an additional minute.
  3. Add the shredded jackfruit to the skillet, along with the smoked paprika, chili powder, ground cumin, salt, and pepper. Stir to coat the jackfruit and sauté for another 5 minutes.
  4. Pour in your BBQ sauce, stirring well. Let it simmer for about 15 minutes until thick and glazed over the jackfruit.
  5. While the jackfruit simmers, toast your burger buns cut side down on a dry skillet over medium heat until golden and crispy.
  6. Place a generous portion of the BBQ jackfruit onto the bottom half of each toasted bun. Add any optional toppings and enjoy!

Notes

Prepare the jackfruit filling in advance for easy meal prep. Leftovers can be stored for up to 5 days.
