Method
 

  1. Peel and mash the ripe bananas in a bowl until smooth.
  2. In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the mashed bananas with buttermilk, melted butter, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the banana mixture and stir gently until just combined.
  5. Heat oil in a heavy-bottomed pot to 350°F.
  6. Drop dollops of batter into the hot oil, frying a few at a time for about 2-3 minutes per side until golden brown.
  7. Remove the donuts with a slotted spoon and let them drain on paper towels.
  8. If desired, whisk together powdered sugar and milk for a glaze, then dip the donuts while still warm.
