  • cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder (preferably Dutch-processed)
  • teaspoons baking powder
  • teaspoons baking soda
  • 1 teaspoon salt

  • 2 large eggs, at room temperature
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water

Method
 

  1. Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well blended.
  3. Add eggs, milk, vegetable oil, and vanilla extract to dry ingredients. Mix on medium speed for about two minutes until smooth.
  4. Slowly stir in boiling water until well combined; the batter will be thin.
  5. Divide batter evenly between prepared pans and bake for 30-35 minutes. Check doneness with a toothpick.
  6. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
