- In a large mixing bowl, whisk together cornmeal, flour, baking powder, and salt.
- In another bowl, combine buttermilk and egg, beating until well integrated.
- Fold in chopped onion (and jalapeƱos if using) into the dry mixture, followed by the wet ingredients, stirring until just combined.
- In a deep skillet, heat about two inches of vegetable oil over medium heat.
- Drop spoonfuls of batter into hot oil, frying in batches until golden brown on all sides.
- Remove hush puppies from oil and drain on paper towels.
- Serve hot, optionally with your favorite dipping sauce.
Notes
Hush puppies are best served immediately after frying for optimal crispness.
