  • 1 lb. boneless, skinless chicken breasts
  • 3 medium jalapeños, finely chopped (remove seeds for less heat)
  • 1 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1 cup cream cheese, softened
  • 1 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C). Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  2. In a skillet over medium heat, add olive oil and sauté the finely chopped jalapeños for about 3-4 minutes until softened.
  3. In a medium bowl, mix softened cream cheese with sautéed jalapeños and half of the shredded cheddar until well combined.
  4. Create a pocket in each chicken breast and stuff with the jalapeño and cheese mixture.
  5. Place stuffed chicken breasts in a greased baking dish, top with remaining cheddar cheese, and bake for 25-30 minutes until cooked through.
  6. Let the chicken rest for about five minutes before slicing and serving with your favorite sides.
