  • 2 lb. Yukon Gold potatoes, scrubbed and halved
  • 8 oz. Greek feta cheese in brine
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp. dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, finely chopped, for garnish
  • Lemon wedges, for serving

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Halve the Yukon Gold potatoes, place in a large pot, cover with cold water, add salt, and bring to a boil. Cook until just tender, about 10-15 minutes.
  3. While potatoes cook, whisk together olive oil, minced garlic, oregano, salt, and pepper in a small bowl.
  4. Drain the potatoes and transfer them to a baking dish. Pour the olive oil mixture over the warm potatoes and toss. Nestle feta cheese in the center.
  5. Bake for 30-35 minutes or until the potatoes are golden and the feta is melted.
  6. Remove from oven, sprinkle with parsley, and serve warm with lemon wedges.

Notes

For extra flavor, add cherry tomatoes or sprinkle red pepper flakes for heat.
