Method
- Preheat your oven to 400°F (200°C).
- Halve the Yukon Gold potatoes, place in a large pot, cover with cold water, add salt, and bring to a boil. Cook until just tender, about 10-15 minutes.
- While potatoes cook, whisk together olive oil, minced garlic, oregano, salt, and pepper in a small bowl.
- Drain the potatoes and transfer them to a baking dish. Pour the olive oil mixture over the warm potatoes and toss. Nestle feta cheese in the center.
- Bake for 30-35 minutes or until the potatoes are golden and the feta is melted.
- Remove from oven, sprinkle with parsley, and serve warm with lemon wedges.
Notes
For extra flavor, add cherry tomatoes or sprinkle red pepper flakes for heat.
