  • 1 medium cucumber
  • 1 cup Greek yogurt preferably Fage for richness
  • 2-3 cloves garlic, minced adjust based on taste
  • 1 Tbsp. olive oil, extra virgin for authentic flavor
  • 1 Tbsp. white wine vinegar adds a nice tang
  • 1-2 Tbsp. fresh dill, finely chopped or use mint if preferred
  • salt and pepper to taste

Method
 

  1. Grate the cucumber into a bowl, sprinkle with salt, and let it sit for 10 minutes. Then, wring it out to remove excess moisture.
  2. In a mixing bowl, combine the strained cucumber with the Greek yogurt, minced garlic, olive oil, white wine vinegar, and dill. Gently fold together.
  3. Taste the tzatziki and adjust seasonings with salt and freshly cracked black pepper.
  4. Transfer tzatziki to an airtight container and refrigerate for at least 30 minutes before serving.

Notes

Tzatziki can be prepared up to 2 days in advance for best flavor, and it stores well in the refrigerator for up to 3 days.
