Ingredients
  

Group: Mac & Cheese Filling
  • 2 cups cooked elbow macaroni
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked thick-cut bacon, crumbled
  • 1/4 cup ranch dressing
Group: Tortilla and Cooking Ingredients
  • 4 large flour tortillas
  • Butter or oil for frying
  • Optional: green onions for garnish

Method
 

  1. In a large mixing bowl, combine the cooked macaroni, cheddar cheese, mozzarella cheese, crumbled bacon, and ranch dressing.
  2. Place a generous scoop of the mixture onto one-half of a tortilla and fold over the other half.
  3. In a large skillet, melt a tablespoon of butter or heat a splash of oil over medium heat.
  4. Place the filled tortilla into the skillet and cook for about 3-4 minutes or until the bottom is golden brown.
  5. Flip the quesadilla carefully and cook for another 3-4 minutes until both sides are crispy and golden.
  6. Once cooked, cut into wedges and serve warm.
